Cookie: Oatmeal Chocolate Chip
I have to be honest with you about this recipe. And don’t be mad. After talking to several friends about our doings this summer, we all agreed on one thing: We gained weight. Ouch. But, I’m here to tell you why I’m a bit chunkier now than I was in June. It’s because of the damn recipe below. There I said it. You all know I have a truckload of sisters. Well, they spent a better part of their summer at my house. Almost every night, we would congregate in my kitchen, break out the diet coke, and feast on a big vat of Oatmeal Chocolate Chip cookie dough. Ugh, I feel awful when I think about it. I’m not sick of the cookie dough, I’m disgusted at my lack of self control. But, make this and you’ll know why I lost all my senses, and gained a coating all around me…just in time for Winter.
1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp vanilla
1 tsp salt
2 tsp baking soda
½ tsp baking powder
2 ¼ cups flour
2 cups old-fashioned oats
1 package of milk or semi-sweet chocolate chips
Cream butter sugars, then add vanilla and eggs. Add dry ingredients and mix just ‘til combined. Stir in oats and chocolate chips. Bake at 350 for 10 to 12 minutes.

I went to my cabinet to get out the ingredients and to my dismay found I am out of CHOCOLATE CHIPS… seriously?? I LOVE a good cookie, so it looks like I am just going to have to head to the store tomorrow. (Or maybe I should take this as a sign that I don’t need to be eating more cookies… nah. can’t be that!)
Okay! This summer I was at a friend’s house and they make their oatmeal chocolate chip cookies with crushed up Crackle bars instead of chocolate chips, and I have to admit: it sounds strange but they were the BEST oatmeal chocolate chip cookies I have ever eaten!
Oh, that was such a lovely summer! I now officially make half the chips milk chocolate and the other half semi-sweet. That way, there’s the perfect balance of chocolatey-ness. Mmmm. Now I feel like making these things right now . . .
I just want you to know that I made this recipe for the first time sunday morning. I have made them 3 times since then. It is Tuesday. Seriously that good…
