Today I’m taking roasted green beans to my friend Elizabeth’s house.
Preheat oven at 400.
Spread fresh green beans on cookie sheet.
Pour 1 Tablespoon olive oil into my hands.
Massage green beans with olive oil.
Roast in 400 degree oven for 10-15 minutes.
This post is really misplaced. I should have done it during the hottest days of summer–where the thought of turning on the oven makes you cringe. Summer Black Bean Salad ~ Jennette Fennimore
In serving bowl combine: 1 can black beans (rinsed and drained) 1 can corn (drained)
1 red pepper, seeded and diced
2 medium tomatoes, diced 2-3 scallions, minced (green tops too)
