Dinner: Grandmom’s Vegetable Saute
Happy New Year! Please excuse my long absence. Like you, I was busy cooking, baking, wrapping, cleaning, singing, and sleeping after all of it. Boy did I sleep. But I’m awake now and thinking about how I can tweak our eating habits in the New Year. Let me start with an oldie but goodie from my dear Grandmom.
Tortilla stuffed with Veggies*
1 clove garlic, minced
1/2 onion, thinly sliced
2 Zucchinis, thinly sliced
1 green bell pepper, thinly sliced (are you getting the pattern?)
1 large tomato, diced
1 1/2 cups frozen corn (fresh is best but as I’m posting this in December, not readily available)
With frying pan on medium heat, melt 1 Tablespoon butter or olive oil. Saute onions and garlic until softened. Add zucchini and bell pepper and saute over medium low heat for 10 minutes. Add tomatoes, corn, salt pepper and cook through. Serve vegetables sprinkled with mexican blend cheese and wrapped in fresh flour tortillas. Healthy and tasty.
*This amount serves between 2 and 3. I usually double the vegetable amounts and throw any loeftover veggies in the next day’s salad. This is a funny dish that is not exact. It’s what my Grandmom would make when we showed up at her house without warning. Healthy fresh vegetables wrapped in a homemade tortilla. She sprinkled her magic dust all over the food and we could not get enough. Miss you, Grandmom.
