Breakfast: Oatmeal Pancakes

Winter is settling in and we may as well get used to it. My sister called me a few days ago enraged that I hadn’t posted this little beauty. It is my favorite pancake recipe from my dear friend Mindy H. She gave this to me years ago. Enjoy.
Oatmeal Pancakes
1 cup quick cooking oats (I used old fashioned, more fiber, better flavor)
1 cup flour
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. salt
2 eggs
1 1/2 cups milk
1/4 cup vegetable oil
1 tsp. lemon juice
Combine oats, flour, sugar, baking powder, and salt in a bowl. Make a well in the center. In a separate bowl combine eggs, milk, oil, and lemon juice. Add wet ingredients to dry and stir until moistened. Pour on griddle and turn.
